Valentines day is this coming Sunday. If you are struggling for ideas why not make your partner something that is pretty to look at and very tasty. My man is not a baker but I would be very happy if he attempted to make me something like this.
Strawberry and White Chocolate Shortbread Biscuits
60g Caster Sugar
230g Plain Flour
4 Frozen Strawberries (Roughly Chopped)
120g White Chocolate (Roughly chopped)
In a bowl beat the butter and sugar together until smooth. Then stir in the flour, strawberries and chocolate and mix until well combined. Knead to a ball, wrap in cling film and leave in the fridge for a minimum of 1 hour. I like to leave dough overnight as this makes it easier to roll.
Pre-heat the oven at 190C (gas mark 5) and Line baking trays with baking paper. Once you have removed the dough from the fridge, roll it out onto a floured surface to the thickness of roughly 1cm. Using biscuit heart shaped cutters, cut out heart shapes. Bake for 15-20 minutes or until lightly browned. Remove from the oven and leave for 2 minutes on the baking tray then place the biscuits on a cooling rack to cool.
