I love pancake day, it has to be one of my favourite days of the year! You can eat pancakes filled with anything you like at any point of the day and it is acceptable to do so. However, I am starting to get my body ready for my wedding next year so I cant be eating my usual calorific pancakes. I researched into a healthier pancake which is still just as tasty and I found many people recommending a 2 ingredient pancake. This pancake is made with just eggs and bananas. I love bananas and cinnamon so I decided to add cinnamon to my recipe. Add some runny honey for a bit of sweetness!

I can’t explain how incredibly tasty these simple pancakes are. I actually prefer them to a normal flour, egg and milk pancake. If you love bananas you will love this recipe!

I have also changed my usual rapeseed oil to a much healthier coconut oil. I used only a small amount of oil as it goes a long way.

  

Banana and Cinnamon Pancakes

Ingredients

1 Banana

2 Free Range Eggs

1/2 tsp Cinnamon

Method

Melt a small amount of vegetable / coconut oil in a non-stick frying pan over a medium heat. In a bowl mash the banana well using a fork. Add the eggs and cinnamon then whisk with the fork until all ingredients are well combined. Using a ladle, take a small amount of the pancake batter (roughly 2tbsp) and pour onto the hot frying pan. Cook for around 1 minute until the underside has turned golden brown, then flip the pancake to cook the other side for a further minute or until that side has turned golden too. Place the pancake on a plate and enjoy!

You can add sliced banana, raisins or any other fruit or drizzle on honey to add extra textures and flavours to your pancake.

 As you can see my 11 month old loves them too!
