Leek and Potato Soup has to be the most simplest and most tastiest meal to make. You can stick it all in a slow cooker, leave it for a few hours then just blend and serve. I love this recipe and so does my family.

Leek And Potato Soup


2 Medium Leeks (Chopped Finely)

1 White Onion (Chopped Finely)

5 Medium Potatoes (Small Cubes)

1 Litre Veg Stock

Salt and Pepper to season

1/2 tbsp. Garlic Salt


In a pan, cook the white onion until softened.

Put all of the ingredients including the veg stock and softened white onion into a slow cooker. Season with salt and pepper then stir. Put on the high setting, cover with a lid and leave for 3-4 hours.

Once the potatoes are cooked, use a hand blender and blend until smooth.

Serve with bread and enjoy!
