This is probably the simplest part of the Christmas dinner to make and you can prepare it weeks in advance as it freezes well. It is a stick it all in a pan and leave until it is cooked kind of recipe. There is no reason not to give it a go. This recipe uses Port but if you don’t have that then a good red wine will work just as well.

Port, Orange and Cranberry Sauce


300g Fresh Cranberries

100g Light brown sugar

5 tbsp Port

Zest and Juice of one orange


Put the cranberries, sugar, port, orange zest and juice in a pan. Place a lid on the pan and cook on a low heat for half an hour, stir regularly. Once the cranberries start to soften, remove the lid and reduce the heat to a simmer. Remove from heat once the sauce has thickened and all cranberries are soft.
