I love Cauliflower cheese especially with a Sunday roast. After trying out this recipe you will no longer need to go buy a white sauce or a ready made cauliflower cheese again. It is so simple to do especially the way that I do it. You don’t have to just have cauliflower, I like to add broccoli to it too. You don’t have to add the roasted garlic, thyme or cream cheese like I have in this recipe, but it does give the cauliflower cheese a rich creamy taste.
Florets of one cauliflower
2 cloves of a roasted garlic
1 tsp Thyme (Dried)
4 tbsp. Plain flour
Large tbsp. Butter
2 tbsp. Cream cheese
100g Grated mature cheddar cheese
Boil a pan of water, add the florets and cook for 5 minutes. Once cooked, pour into a colander and leave to drain whilst you make the white sauce. Pre-heat the oven at 200⁰c (gas mark 6). Put milk, plain flour and butter into a pan. Place the pan on a medium heat, wait for the butter to melt then stir continuously until combined and thickened. Take the pan off the heat, stir in the cream cheese, thyme and the grated cheese (Leave some of the cheese for the topping). Using a garlic presser, press in the roasted garlic and stir well. Place the cauliflower into an ovenproof dish and pour over the white sauce. Sprinkle on the last of the cheese and place in the pre-heated oven. Cook in the oven for 15-20 minutes or until the cheese has slightly browned.
