At Christmas most families will purchase a large amount of cheese and chutneys. But once Christmas day is over they tend to sit in the back of the fridge until they are well past their use by date. Instead of producing unnecessary waste, use it to make a beautiful pastry snack for all your friends and family to enjoy on Boxing Day. I use ready-made Filo pastry as I don’t have the time or kitchen space to make my own. Please use this as a guideline, try out different leftovers from meats to veg and see what goes.
Boxing Day Parcels – Cheeseboard leftovers
Ready Made Filo Pastry
Chorizo (Thinly sliced)
Different Cheeses (Cut into small cubes)
Chutney (I used caramelised red onion)
Chestnut Mushrooms (Thinly sliced and cooked)
Preheat the oven at 180⁰c (gas mark 4).
Lay out your pastry sheets on a large chopping board and cut all the sheets in half. In each parcel use two of your halved sheets. Lay the two sheets on top of each other and brush water around the edges which will make the pastry stick easier.
Place the filling in the middle of the pastry, the fillings I used were;
Mature blue stilton and mushrooms
Cranberry cheese and chutney
Mature cheddar, chorizo and chutney
The amount you put into the parcel is up to you but I used a tbsp of cubed cheese and a tsp of chutney. You don’t want to overfill as this could cause the fragile pastry to split and the filling to leak out whilst cooking. Bring each corner up into the middle and pinch the pastry together, make sure there are no gaps. My pictures below show how they need to look.
Place around six parcels on a large baking tray lined with greaseproof paper. Spread them out just in case one does leak.
Cook for around 12-15 minutes or until the pastry starts to brown.
