With Winter fast approaching it is easy to get into the same routine of cooking hearty slow cooked dinners from stews to pies. Which are lovely especially on a cold dark evening but sometimes you want a bit of summer back and some exciting fresh flavours. This recipe is great at giving your taste buds some excitement and making you feel like the warmer months aren’t that far away.

Ingredients

Crusty Baguette

1 Avocado (Mashed)

Cherry Tomatoes (halved)

3 Chestnut Mushrooms (Chopped into small chunks)

Feta Cheese (As much as you like)

Balsamic Vinegar

Method

Place the mushrooms in a frying pan on a medium to high heat. Once cooked, turn the heat off the pan and add the tomatoes to lightly cook them.

Cut the crust baguette in half lengthways, then width ways and place in a warm oven. This will turn the whole baguette nice and crusty.

Mash the avocado and spread over the warm baguette.

Place on the mushrooms and Tomatoes.

Sprinkle on the feta cheese

Drizzle on the balsamic vinegar.

Then Enjoy!

  1. This looks lovely. I can never feel the love for avocado – but I see so many people mashing it & serving on bread or toast – I will try this one as I lve feta, tomatoes, mushrooms & crusty bread

    1. I hadn’t really eaten avocado until about a year ago. Now I put it in so many different recipes, especially if I am using wraps. It really is a tasty little dish!
